On the hills of Fiora, in the Tuscan Maremma, about 350 meters. above sea level. in a historically suitable area, the cultivation of the olive tree has been going on for thousands of years. Our olive grove has about 300 plants and is located in a favorable position for exposure, nature of the soil and microclimate (absence of fog).

The varieties are leccino, frantoio, corregiolo, maurino and, to a lesser extent, canino, moraiolo and pendolino.

The harvest is done by hand, directly from the tree, when the olives reach the right degree of ripeness.

Processing takes place within 36 hours with a continuous cycle system at a temperature never exceeding 30 °; this system allows both to preserve the natural substances contained in the olives without undergoing oxidation processes that could compromise all the precious health characteristics, and to maintain its quality characteristics unchanged over time.
