About ILune Extra Virgin Olive Oil
In the hills of the Fiora valley, here in the Maremma, at approximately 350 m above sea level, olives have been cultivated for thousands of years. Our specialised olive grove of 300 trees is planted here, where favourable micro climate and good earth ensures their success.
The varieties of olive includes Leccino, Frantoio, Corregiolo and Maurino and to a lesser degree Canino, Moraiolo and Pendolino.
The fruit is harvested by hand at just the right moment of ripeness.
Pressing takes place within 36 hours, and a cyclic system is used so that the temperature remains below 30oC, ensuring that the oil does not oxidise, and therefore not losing any of their natural colour or flavour.

Taste and Structure
The oil is well balanced, with a green fruit smell incorporating green tomatoes.
To the taste it is slightly spicy with similar green tomato undertones. A good harmony of flavour and overall excellent quality
